.25# Roasted Barley
1.5 oz. East Kent Goldings (4.5% aa) for 90 minutes
1 oz. East Kent Goldings (4.5% aa) for 30 minutes
Whitelabs Edinburgh Yeast
1 T. Irish Moss 30 minutes

Mashed at 158 F with nearly 4.5 gallons water for 90
minutes.  Sparged with 3 gallons.  Boiled first gallon
of wort for 30 minutes, then total wort for 90
minutes, adding hopes as listed above.

Primary fermentation: 11 days @ 70 F
Secondary fermentation: 30 days @70 F
